Primal Eats: Young Coconut

Young Thai Coconut

The flesh.

What the hell? Coconuts as a food source?

Yup, you got that right. Coconuts are actually a good source of healthy saturated fats, various minerals, protein, and hydration. Although cracking these things open take a bit of work, you'll soon forget about that as you delve into the first sip of its water; let me just tell you, it's among the most refreshing fluids I've ever had the pleasure of drinking. The meat clings to the inside of the coconut and requires a bit of scraping to get out. The consistency of the flesh is reminiscent of aloe jelly or agar, giving you a slightly crunchy jell-o texture. If you ever want to eat one of these things, make sure you avoid the post-modern super market and find them at an Asian market; you'll save upwards of 2 dollars.
